Ameijoas Portuguesas (Portuguese Clams)
This Portuguese recipe is bold and salty. Serve delicious, garlicky clams with thick slices of French bread at your next dinner party!
Ingredients
- 3 garlic cloves
- 1/4 cup olive oil
- 2 pounds small clams or mussels
- salt and pepper, to taste
- juice of 1/2 lemon
- 1 bunch of parsley. chopped
- Lemon wedges
- French bread, toasted
Instructions
1. Halve garlic and saute it lightly in oil. When hot, add clams which have been thoroughly rinsed in several waters. Season with salt and pepper. Cover with tight lid and steam until clams open.
2. Add lemon juice and parsley. Then shake pan to distribute and leave over heat for a few minutes longer. Serve piping hot with lemon wedges and slices of bread.
