Potato Salad Bites

Ingredients
- 12 small red potatoes, about 2-inch size
- 6 eggs
- 1/2 cup mayonnaise
- 1 teaspoon yellow mustard
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon salt, divided
- 2 green onions, finely minced (about 2 tablespoons)
- 2 tablespoons finely minced celery
- 2 tablespoons finely minced parsley
- 1/4 teaspoon paprika, plus more for garnish
Instructions

In a 5.2 quart stockpot, place the potatoes and cover with water. Bring to a boil, lower the heat and cook at a low boil for 17 -20 minutes, until potatoes are tender but not mushy when pierced with the tip of a paring knife. Drain.

In another pot, place the eggs, cover with water and bring to a boil. Lower the heat and simmer for 12 minutes. Drain, chill in ice water, and peel.

In a large bowl, combine mayonnaise, mustard and vinegar and stir until smooth, then add half of the salt, the onion, celery, parsley and paprika, stirring to combine.

Chop the eggs finely and add to the bowl with the dressing.

Cut each potato in half at the equator and use a spoon or melon baller to scoop out the center, leaving a thin but sturdy shell. Chop the scooped out potato into small cubes and add to the bowl. Set the potato cups on a serving dish and sprinkle lightly with salt.

Mix the potatoes and eggs with the dressing until all the ingredients are mixed and then spoon into the shells. Garnish with a sprinkle of paprika, a bit of parsley and very finely chopped green onion. If not serving immediately, cover with plastic wrap and refrigerate until serving time.

This would be amazing if you were to halve the potatoes and roast them...then after scooping out the insides, you can use the roasted skins as your cup to fill it with all of that deliciousness. And, you can probably even serve them hot or cold and perhaps add a little bacon and chives if you're feeling creative. Yum!

I sometimes make these as a side dish when entertaining guests outside when barbequing in the summertime, But I add even more veggies into the mix. Finely diced jalapeno and red pepper really work well in these, and make them a little more healthful. They are great on the side of a steak or even barbequed chicken. When I first saw this recipe it reminded me of a fun new twist on deviled eggs!

I loved the idea of putting the potato salad in a potato itself. The bites made for a really great snack. I'm also not usually a fan of egg or potato salads, so I was surprised to find that I liked them together. I'd try this again.

I liked the mixture of potato and eggs. Pure egg salad is too much for me, but the potatoes evened it out. Great recipe.

I don't usually like egg salad and I'm very particular about what kind of potato salad I eat, but this combo was surprisingly really good.

This is my new favorite potato salad! Very good flavor throughout. One thing I don't like about Potato salad is they can become too filled with mayonnaise. Not this one! The flavors of each ingredient came through. Didn't need any additional salt / pepper. Perfect as it is. Like it very much!

Yum! I loved that these bites perfectly combined the flavors of potato salad and egg salad -- 2 of my favorites! These would be great to serve at parties since they're easy to munch on.
