Green Tomato Jam
Ingredients
- 11 cups chopped green tomatoes
- hot water
- 8 cups sugar
- 2 lemons, thinly sliced
Instructions
Cover tomatoes with hot water and boil for 5 minutes. Drain, and add sugar. Let stand for 3 hours or longer. Drain syrup into a kettle; bring to boil and cook rapidly until it spins a thread. Add tomatoes and sliced lemons; cook for 10 minutes until thick and clear. Pack into hot sterilized jars, and seal. Makes 4 pints
