    Marinated Mushrooms

    Ingredients

    • 1 pound fresh button mushrooms
    • 1/4 cup chopped onion
    • 1 clove garlic, chopped
    • 1 tablespoon chopped parsley
    • 2 bay leaves
    • 1/4 teaspoon dried tarragon
    • 1/2 cup white wine
    • 1/4 white wine vinegar
    • 2 tablespoons olive oil
    • 1 tablespoon lemon juice
    • 1/4 teaspoon salt

    Instructions

    Wash mushrooms. Set on paper toweling to dry. If mushrooms are too big for a single bite, cut to convenient size. (Note: Mushrooms will shrink during the cooking process.) Combine all ingredients in a large saucepan. Bring to the boiling point. Reduce heat and simmer, covered, for 8-10 minutes. Allow mixture to cool. Refrigerate until approximately one hour before serving. Allow mixture to come to room temperature. Drain mushroom well before serving.
