Rice Pudding

Ingredients

  • 1 cup rice Valencia (it's the small round one)
  • 4 cups water
  • 3 cups milk
  • 1 cup evaporated milk
  • 1 stick cinnamon
  • 6 to 8 small lemon peel slices
  • 10 to 14 T. sugar (add more or less, depends on preference)

Instructions

Pour rice in boiling water. Allow it to absorb almost all the water. Add all other ingredients, and lower flame. Leave for an hour. Makes 6-8 servings.
