Homemade Vanilla Bean Pudding

Ingredients
- 2 1/4 cups whole milk, divided
- 1/2 vanilla bean, seeds + pod
- 1/2 cup granulated sugar
- 3 tablespoons cornstarch
- 1/4 teaspoon salt
- 1 egg yolk
- 1 tablespoon butter
Instructions

In a medium saucepan over medium heat add 2 cups milk. Cut vanilla bean in half then split lengthwise. Scrape seeds into saucepan and add pod.

In a separate bowl whisk 1/4 cup milk, salt, egg yolk and sugar. When milk begin bubble add egg yolk mixture to saucepan.

Stir well and continue simmering until mixture thickens; be careful not to scorch. Pudding is ready when mixture is thick enough to coat a spoon.

Remove from heat; discard vanilla bean pod and add butter. Stir well and ladle into serving dishes; chill for two hours.

Nothing is better than a true vanilla bean dessert, is it? This treat is going to go in my recipe book for a night when I want to surprise the family with something special. I think a family night when all the kids can come home for dinner is a good enough occasion since we can rarely get together for a meal sometimes.
