When I make Mongolian Beef, I usually marinade the meat in a sauce containing a bit of baking soda to help tenderize the meat. It's good to know that cornstarch can serve much the same purpose. I like the addition of the larger pieces of green onion since I normally chop them into smaller pieces. It's made me think of some other greens that could be added, like perhaps a bit of spinach.
