I love carrot cake and I love cheesecake. What a great cheesecake. Unfortunately I don't know the cheesecake factory as I live in South Africa but I'm going to try this cake! I'm glad to see that there is still cream cheese frosting on the top. I think I may leave the pineapple juice out of the frosting.

This Copycat Cheesecake Factory Carrot Cake Cheesecake is an absolute must have recipe. The recipe is not complicated at all, it is well written and easy to follow. I wish I could find adequate words to describe the wonderfullness (is that even a word?) of this cake. The moist carrot cake, creamy cheesecake, and pineapple cream cheese frosting are a combination you will fall in love with. Put this one on your "to do" list now!
