The Caprese salad is always one of favorites. I like the basic simplicity of it and it's quite delicious. This is a nice version, though I usually add some thinly sliced onion to the salad, and I normally have it with some focaccia bread. One recipe I came across used the focaccia bread as a base for the salad and I think that's a good idea to try out. This is a great summertime dish when tomatoes are plentiful and fresh and relatively inexpensive.
