Spam Kimchi Fried Rice
"Spam Kimchi Fried Rice is a bowl of fried rice with fermented kimchi bits, and chopped Spam cubes, dried seaweed, and topped with a sunny-side-up egg, more Korean seaweed, sesame seeds, and green onions. Kimchi is a fermented vegetable side-dish which has a lot of varieties, too. The most common is the Chinese cabbage kimchi. One reason is that they love fermented food. The probiotics and prebiotics are the incredible by-products in the fermented food they eat to keep their gut flora, or their stomach, healthy. "

Ingredients
- 2 cups white rice
- 1 cup chopped SPAM
- Salt
- Ground black pepper
- 1 tablespoon sesame oil
- 1 cup korean seaweed/ nori
- 1 sunny side up egg
- Chopped green onions
- Sesame seeds
- 1 cup water
- 1/2 cup chopped kimchi with the juice
- 1 teaspoon brown sugar
- 1 small onion chopped
- 2 clove of minced garlic
- Cooking oil
Instructions

Heat up the pan or wok under medium fire, and add the cooking oil. Saute onions and garlic until onions are translucent.

Add chopped SPAM, and cook for about a minute. Add chopped kimchi with the juice, and saute for another minute. Add water, and let it simmer under low fire for 30 seconds.

Add white rice, salt, pepper, brown sugar, and sesame oil. Mix everything well.

Once all the rice is covered with the kimchi juice, add the korean seaweed, and mix again for another minute.

Once done, transfer it to a serving bowl or plate, and top it with sunny side up egg, salt, sesame seeds, more korean seaweed, and chopped green onions.
