we have made this a handful of times and we love it. The chicken doesn't always get coated very well so after we shook the chicken in the bag, we also "squeezed" the cracker mix into the chicken which turned out way better when it is coated so well. Before, doing the "shake n bake" type method, it never turned out anywhere near as coated as they do in the picture. We continue to make it, and we love it!

I love chicken that is baked like this so I knew this was going to be a good recipe! We did not have any Ritz crackers so I used dried bread crumbs which worked out fine. The parmesan provides a wonderful bite to the overall flavor and this is definitely a recipe that we will return to again and again.
