Beet and Orange Salad
Ingredients
- 3 tablespoons vegetable oil
- 3 tablespoons cider vinegar
- 1 teaspoon sugar
- 1/4 teaspoon ground cumin
- 16 ounces can sliced beets, cut into halves or quarters, drained or fresh cubed.
- 1/4 cup chopped red onion
- 2 large oranges, peeled and sectioned
- lettuce leaves
Instructions
makes 6 servings. In medium bowl combine oil, vinegar, suger and cumin. Add beats and onion, toss gently to coat. Cover, chill to blend flavors. With slotted spoon, remove beets and onion from marinade. Arrange with oranges on lettuce-lined platter. Drizzle with 3 Tablespoons marinade. Note: I like to use drained mandarin oranges and use some of the juice to sprinkle over all.
