Easy Seafood Macaroni Salad
"If you’re looking for a quick easy macaroni salad recipe for a spring time brunch, BBQ, or picnic try this Easy Seafood Macaroni Salad. I originally made this for a fish fry party. This twist on a classic macaroni salad recipe uses a yogurt based mayonnaise, canned baby shrimp, fresh dill, and seafood seasoning along with diced celery and sweet bell pepper. It can easily be made in less than 30 minutes. By using gluten free pasta, you can make this for guests or family members who have to avoid gluten. Or make it more wholesome by using whole wheat pasta."

Ingredients
- 1 box elbow macaroni (to make at least 6 cups cooked macaroni)
- 2 cups yogurt based mayonnaise
- 1 cup sweet relish
- 1 tablespoon classic seafood seasoning blend
- 1 teaspoon fresh lemon juice
- 2 tablespoons minced onion
- 1 teaspoon chopped fresh dill
- 2 (4-ounce) cans baby shrimp, drained
- 1 cup diced celery
- 1 cup diced bell pepper (orange, red or yellow)

Cook macaroni as directed until al dente. Drain and rinse in cold water to stop cooking process. Set aside.

In a medium bowl, combine mayonnaise, relish, seafood seasoning blend, lemon juice, minced onion and dill. Stir until combined.

Add baby shrimp, celery, and bell pepper. Gently stir until combined.

Gently fold in 6 cups cooked macaroni until macaroni is combined with other ingredients. Cover and chill for 4 hours.
