Strawberry Cucumber Salad
"While it’s common to make fruit salads or vegetable salads, it always provides a refreshing and exciting twist when the two are combined. That’s what I did in this pretty and tasty twist on a cucumber salad that includes luscious strawberries. With the combination of cucumbers and strawberries in this snack or side dish, you get a blend of soft and sweet strawberries with crisp and light cucumbers. The mix of deep red and light green adds to the display, which I like to enhance by overlapping slices with an alternating pattern between fruit and vegetable."

Ingredients
- 16 ounces fresh strawberries, sliced
- 1 large cucumber, peeled and thinly sliced
- 2 tablespoons balsamic vinegar
- 2 tablespoons maple syrup or honey
- 1/4 teaspoon kosher salt

Trim off the top of strawberries and slice them horizontally into thin circles. Peel and slice cucumbers.

Arrange slices on a serving platter, overlapping layers.

Whisk vinegar and maple syrup together until blended; drizzle over the salad. Then sprinkle with salt. Serve.
