    Ingredients

    • 2 large handfuls of salad leaves (or spinach)
    • 1/2 small melon, cut into small chunks
    • 1/2 small cucumber, peeled and cut into small chunks
    • 1 Tablespoon fresh ginger, grated or diced into small pieces
    • 2 teaspoons fresh lemon juice
    • 2 Tablespoons extra virgin olive oil
    • 1/2 teaspoon sea salt (or to taste)
