This corn salad looks really good. I think the vinaigrette with apple cider vinegar must be nice. I like the fact that there are avocados in the salad. I love them. I also love corn a lot. If corn is not plentiful at the time then I am sure you could use the tinned variety.

This recipe looks like an amazing side dish and I can't wait to try it now that grilling season is here! I love grilled corn too - I usually cook it by soaking the husks in water and then grilling with the husks still on. Then when the corn is tender, I peel the husks off and then grill for a few minutes to get the grill marks and flavour. It keeps the corn from burning this way! Pre-boiling the corn before grilling would work too!

Grilling the corn before cutting it off the cob is really worth the effort. But I found it inconvenient to go out in get the grill started before we were actually going to be grilling outside so what I did instead was cook it in a little bit of water in a pan on the stove on high with some butter and then when the water had all evaporated and was just the corn in the butter, I lowered the heat and sort of roasted the Cornthat way. It's almost like frying it on the cob and it transformed it into grilled corn. For the vinaigrette you have to use fresh-squeezed lemon. The reconstituted lemon or any bottled lemon just isn't the same.
