I am writing a menu for a Hawaiian luau themed lunch meal in the cafeteria of where I work. I think this pasta salad with mandarin oranges and a teriyaki vinaigrette would actually be perfect for our themed salad bar. If you aren't a big fan of the teriyaki flavor, any homemade or store bought vinaigrette dressing would work well. For example, a citrus vinaigrette would be perfect.

Salads are amazing. No I don't eat the conventional lettuce, cucumber and tomato salads all the time which is why I think they are amazing. A salad dressing can make an amazing difference. This salad has all the making of something spectacular from the teriyaki dressing to the addition of mandarin oranges and the use of nuts, raisins and spinach leaves. This salad has everything. Yummy, I can't wait to make it.
