Ingredients
- 4 pounds red potatoes
- 4 cups grated Cheddar cheese
- 24 ounces sour cream
- Salt and pepper, to taste
Instructions

Preheat oven to 350 degrees F.

Boil potatoes in a large pot until fork-tender.

Allow potatoes to cool, and then peel. Using the large holes on a grater, shred potatoes.

Place potatoes into a large bowl. Stir in the cheese and sour cream. Add salt and pepper to taste.

Pour potato mixture into a greased baking dish.

I make my potatoes with sour cream, butter, cream of chicken soup, onion, and shredded medium cheddar. I also use the hashbrown potatoes. I think on this website I've seen them referred to as funeral potatoes! This recipe sounds a bit easier and probably just as yummy. I love a potato recipe that will feed a crowd and that is cheesy!

I make my potatoes almost the same way, except I put not only sour cream, I also add cream cheese. Yummy!!

My aunt makes a version of this recipe for Christmas every year. The sour cream gives the potatoes a nice zip. If you don't want to shred the potatoes, it's nice to just put them through a potato ricer. It makes the texture really nice! When my fianc makes this recipe, he sometimes adds a bit of cream cheese and chives for more layers of flavour. You will not be disappointed in this recipe. Give it a try!

Here's a question I'm wondering if using frozen hash brown potatoes could replace the cooked and grater-shredded potatoes in this dish? It would certainly make the process a lot quicker. I always have some bags of hash brown potatoes in the freezer and this would be a great way to make them. With the Cheddar cheese and sour cream ... yummy!
