Avocado Cucumber Ginger Salad Recipe
"This is a super simple salad for summer. The cucumber and ginger make it really refreshing, and the avocado adds in some extra healthy fats. This recipe can be a side dish or a quick snack. It takes 5-minutes to make, and you can use your leftover cucumber and avocado from making another dish. We find this recipe tastes better with sesame oil, but you can also use olive oil instead. One of the best things about this recipe is that it’s Paleo, Keto, and AIP (if you use olive oil and omit goji berries)."

- 1/2 cucumber, peeled and diced small
- 1/2 avocado, diced small
- 1 Tablespoon freshly grated ginger
- 1 teaspoon lemon juice
- 1 Tablespoon sesame oil or olive oil [Use olive oil for AIP]
- Salt to taste
- 1 Tablespoon goji berries [Omit for AIP]
