Goan Egg Curry
"I personally love Asian curries on rainy days. Especially Indian curries from Goa have taken over my heart over the past years. One of these heart robbing curries is the Goan egg drop curry. This particular red curry is prepared with coconut, spices and fresh ingredients and is red-orange in color. The paste is prepared in a blender and is added to a shallow pan with water. The eggs are then dropped into the curry just before serving time. The egg curry itself takes only 20 minutes prepping and cooking time and is prepared all in one pot. Besides the curry is vegetarian, low carb and keto friendly and it's not spicy hot but rather flavorful!"
