Congressional Bean Soup
This tasty bean soup is a great first course or hearty lunch. The combination of white beans and ham creates a delicious slow cooker soup that the whole family will love.

Ingredients
- 1 pound small white beans
- 8 cups water
- 2 cups ham, diced
- 1 cup onion, diced
- 1 cup celery, chopped
- 2 tablespoons parsley, chopped
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 bay leaf
Instructions
1. Assemble ingredients in Crock-Pot.
2. Cover and cook on low 8-10 hours or until beans are tender.

For better flavor, use 2 to 3 meaty ham hocks or a meaty ham bone is much better. Use just half the package of beens and soup not so bland. Omit salt and towards the last add a Knorr Tomato Bouillon with Chick. flavor cube to soup and 1/4 cup minced carrots. Our family likes to add their own dash or two of Texas Pete type of hot sauce, too. It tastes even better the second day, if the family doesn't down all the soup at the first meal.

I found this soup to be very blan. It needs something but don't know what.
