These cheesy potato stacks sure look delicious and the best part is they're so simple to prepare. It's similar to making a sandwich with sliced bread once the potatoes are cooked and smashed. A nice twist on this recipe would be to replace the cheese with ground turkey, shredded chicken, tuna or even hummus for a vegan option.

This is a really cute little recipe. I've not heard of the Little Potato Company before, but apparently they're carried at Wal-Mart, so I'll have to check the next time I'm there. The use of the packaged potatoes cuts down immensely on the prep time, which otherwise would be somewhat lengthy. It's a cute idea and we'll have to try it when our granddaughter comes for a visit.
