Beef Stock
Ingredients
- 2 pounds beef bones (up to 3 lbs)
- 8 c water
- 1 onion, unpeeled
- 1 carrot, scrubbed & sliced
- celery leaves
- 3 sprigs parsley
- 6 whole peppercorns
- 3 whole cloves
- 1 ts crushed basil leaves
- 1 clove garlic
- 2 tb vinegar
- 2 ts salt
Instructions
Brown bones slowly in a heavy pot. Add remaining ingredients and simmer, covered, for several hours. Strain broth and cool. Skim fat from top of stock.
