Best Ever Peanut Butter Soup

Ingredients
- 1/2 cup onions, diced
- 1/2 cup celery, diced
- 1/2 cup green peppers, diced
- 2 garlic cloves, minced
- 3 tablespoons butter
- 3 tablespoons flour, or more if needed
- 2 1/2 cups chicken broth
- 5 cups milk
- 1 cup half and half
- 1 cup creamy peanut butter
- 2 tablespoons tomato paste
- 3 tablespoons soy sauce
- Chopped peanuts, for garnish
Instructions
- Saute onions, celery, green pepper and garlic in the butter until onions are translucent.
- Add flour and cook for 2 to 3 minutes, until you have a light roux.
- Stir in broth, and then add milk and half and half slowly. Bring to a boil.
- Add peanut butter, tomato paste (optional), and soy sauce. Reduce heat and simmer for approximately 15 minutes.
- Serve hot with chopped peanuts for garnish.
