- 1 pound Ground Beef
- 2 tablespoons Unsalted Butter
- 1 cup Diced Yellow Onion
- 1 cup Celery
- 1 cup Grated Carrot
- 3 tablespoons All Purpose Flour
- 3 cups Beef Broth
- 3 cups Russet Potatoes
- 2 cups Whole Milk
- 16 ounces Velveeta Cheese
- 1 tablespoon Parsley
- Salt and Pepper
- 1/2 pound Bacon
- 2 cup Cheddar Cheese

In a large stockpot or Dutch oven, saute the beef until browned. Drain and set aside.
