Minestrone Soup

Ingredients
- 1 cup Olive Oil
- 1 cup Butter
- 1 Yellow Onion
- 2 Carrots
- 2 Ribs Celery
- 1 pound Green Beans
- 1 head Cabbage
- 2 Medium Zucchini
- 16 ounces Diced Tomatoes
- 5 ounces Spinach
- 6 cup Vegetable Stock
- 2 teaspoon Salt
- 1 teaspoon Pepper
- 16 ounce Great Northern Beans
- 16 ounce Dark Red Kidney Beans
- 8 ounce Ditalini Pasta
- Parmesan Cheese, Basil, parsley

In a large dutch oven (7.5 or 8 qt), heat oil and butter until melted. Add the onions, carrots, celery, and green beans. Cook for 10 minutes stirring occasionally.

Add in the cabbage, zucchini or squash, and diced tomatoes. Cook for another 10 minutes stirring occasionally.
