This is a really good list of emergency substitutions that is a bit out of the ordinary. My favourite, so far, is the buttermilk substitution. I have used that one to make bran muffins quite a few times when I didn't have a carton of buttermilk in my fridge. I am really looking forward to trying the homemade lemon curd recipe and the homemade vanilla extract recipes from this guide next. If they turn out as well as the buttermilk substitution, I'm sure they'll be great.
