Leftover Ham and Cheese Turkey Rolls

Ingredients
- 4 thin slices cooked ham
- 4 thin slices Swiss cheese
- 4 boneless turkey cutlets, about 1 pound
- 2 tablespoons vegetable oil
- 1 can (10.75-ounces) condensed cream of broccoli soup
- 1/3 cup milk
- 2 medium green onions, sliced
- 1/8 teaspoon dried thyme, crushed
- parsley, to taste
Instructions
- Place a ham slice and a cheese slice on each cutlet. Roll up the turkey from the narrow end, jelly-roll fashion. Tuck in the ham and cheese, if necessary, and secure with wooden toothpicks.
- In a 10 inch skillet, over medium-high heat, in hot oil, cook the turkey for 5 minutes or until browned on all sides. Spoon off fat.
- In a small bowl, combine the soup, milk, onion, and thyme. Pour over the turkey.
- Heat to boiling. Reduce the heat to low. Cover and cook 10 minutes or until the turkey is tender and no longer pink, stirring occasionally. Garnish with the parsley and serve.
