This is an absolutely fabulous recipe for anyone who is watching their daily intake of carbs or who just likes simple healthy one pot meals! The use of the bagged coleslaw veggie mix is such a great time - saving tip! It really cuts down on the prep time. If there is any left, it is great for a quick microwavable lunch at work the next day!
