Hungarian Paprika Potatoes with Sausage
Ingredients
- 4 tbsp vegetable oil
- 1 clove garlic, minced
- 2 small onions, chopped
- 1 green pepper, cored, seeded, and finely chopped
- 10 medium potatoes, peeled and diced
- 2 teaspoons hot Hungarian paprika
- 2 tomatoes, peeled, seeded and diced
- 1 teaspoon salt
- pepper to taste
- 1 pound firm Hungarian sausage, cut into 1/4 inch slices (substitute Kielbasa)
Instructions
Heat the oil in a saucepan and saute the garlic, onion and green pepper for 3 minutes. Add the potatoes, and saute for five minutes. Dust with the paprika and stir to coat potatoes. Add the tomatoes, salt and pepper and enough water to cover the ingredients. Cover the saucepan and cook for 15 minutes or until the potatoes are almost tender. Add the sausages and cook for five minutes. Drain and serve hot. Serve alongside crusty peasant bread and a cucumber salad.
