Kimchi Fried Rice Recipe

After all, kimchi and rice are a perfect combination to ease your craving for Korean food. It’s simply delicious! If you’re using freshly made kimchi, make sure it is at 2 weeks old. If not, add 1/2 teaspoon of rice vinegar to the kimchi juice to make it sour. Getting 1/4 cup of kimchi juice can be a hassle if your kimchi is fairly young."
NotesBroccoli, cauliflower, spinach, and carrots are great in this dish too. If you’re low-carb, you may also use cauliflower rice instead of regular rice.

Ingredients
- 1 cup kimchi
- 6 ounces bacon
- 1 package enoki mushrooms
- 3 cups steamed short-grain rice
- 4 large eggs cooked sunny side up
- 1 teaspoon garlic
- 1 cup Kimchi juice
- 1 tablespoon sesame oil
- 1 tablespoon cooking oil
- 1 tablespoon sesame seeds (garnish)
- 1/2 stalk green onion (garnish)
- Salt and pepper to taste
Instructions

Add oil in a heated pan or wok.

Sauté minced garlic for 30 seconds.

Then add the chopped bacon and cook until crisp.

Add chopped kimchi and cook for another 4 minutes.

Add mushrooms, rice, and sauté for 6 minutes.

Then add kimchi juice and mix thoroughly.

Add sesame oil.

Season with salt and pepper to taste.

Remove from heat and garnish with sesame seeds, chopped green onion, and fried eggs.
