Cooked Red Amaranth Leaves
"Red Amaranth is a super healthy vegetable. The leaves are extensively used in Asian cuisine and are very nutritious. You might know amaranth seeds as in popped amaranth seeds but this vegetable shouldn't be left out either. I stir cook and saute the leaves and that way I retain all the nutrients in this veggie. The recipe is a Goan Indian recipe which is commonly prepared amongst locals to serve as a side with other vegetables, rice, and curry. However, the red amaranth side dish can be served too with western meals such as poached or grilled fish and seafood or vegan meals."
