Ma's Sweet Potato Casserole
My Ma's Sweet Potato Casserole is at every Thanksgiving dinner. Topped with marshmallows and pecans, this delicious casserole recipe has a warm sugary glaze that makes the dish a must. Your family will love this!
Ingredients
- 6 large yams or sweet potatoes
- 1/2 cup fruit juice (orange, apricot, apple or pineapple juice)
- 1/2 stick of butter, softened
- 1/2 cup golden raisins (plump in boiling water to soften and drain)
- 1 can crushed pineapple, drained
- 1/2 cup toasted chopped pecans, almonds or walnuts
- 1 quart sweet sherry wine
- 1 cup light brown sugar
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cinnamon
- 1/4 teaspoon ginger
- 1/4 teaspoon cloves
- salt, to taste
- pepper, to taste
- 1 package of mini marshmallows (optional)
Instructions
- Preheat oven to 350 degrees F.
- Mash cooked or canned yams or sweet potatoes.
- Blend in fruit juice, butter, raisins, pineapple, nuts, wine, brown sugar and spice. Salt and pepper to taste.
- Place in casserole dish and cook covered 350 degrees F about 30 minutess or well heated or heat in microwave on high about 10 minutes.
- For optional topping. cover top of casserole with a layer of mini-marshmallows. Place briefly under oven broiler to brown and melt.
