Roasting vegetable always makes them taste better. I think adding a bit of Parmesan cheese and cream will only add to the flavor further. I love the name of this blog, cinnamon spice, it makes me think of squash and pumpkins! I'm definitely keeping this one for my recipe collection.

I love squash and to me this is such a novel way of preparing it. The idea of oregano or thyme plus cream, parmesan and, of course, drizzled olive oil really speaks to me! And then it all bakes itself quietly into deliciousness while I carry one with other things. Looking forward to making this soon!

Acorn squash is basically one of the most delicious vegetables out there. I have never thought to add parmesan to the wedges however, this looks great! I also really like acorn squash baked with maple syrup and/or brown sugar, cinnamon, and nutmeg. It's sweet like pumpkin but also has a nutty flavor that goes so well with the fall spices.
