Super Stuffed Acorn Squash
Super Stuffed Acorn Squash is such an exciting side dish, it can be used as a main dish for vegetarians. After the initial roasting of the squash, the rice and mushroom filling is stuffed into the squash and it's all baked again. If you're trying to feed someone who isn't enthusiastic about squash, just give them the filling to start with. It's a good way to introduce this vegetable, since there's a little squash in the filling. It's time to start branching out to exciting and flavorful side dishes. This is basically a twice baked acorn squash stuffed with a muchroom risotto! Now doesn't that sound absolutely delicious?! To make it even a little bit healthier, try brown rice sintead of white and a low sodium broth of your liking. This filling could also work well with a butternut squash, too!!

Just yesterday I bought some acorn squash, not having seen them available for ages, so I was really happy to find this really nice recipe for stuffed acorn squash. We made it for dinner tonight, adding some chopped red bell pepper because we had some, and a little chopped garlic and chili because we love those flavors. It was really tasty and, given that everyone loved it, we will definitely be having it again soon!

I'm not a vegetarian, but this dish is so filling and tasty, I would definitely enjoy this as a main dish. These would really impress your guests at a holiday gathering. I've found that people really enjoy and appreciate when you go to the trouble to make individual goodies like this. You could even make more smaller portions out of this by simply cutting the squash in half again and scooping the stuffing over top of them all in a large casserole dish. This would even help reduce the roasting time!

If you haven't already, you really need to make this Super Stuffed Acorn Squash. The recipe is well written and easy to follow, and the result is a flavorful dish that is suitable as a side dish, or honestly I make them as a change of pace, break from meat main course. I love this recipe so much I'm thinking of trying it with other types of squash, buttercup, or even spaghetti squash.
