Sweet Onion Rings with a Spicy Aioli
Ingredients
- Sweet onions
- Equal parts milk and buttermilk
- Flour
- Peanut oil, preheated to 360 degrees
Instructions
Peel and slice the onions 1/4 inch thick, then separate the rings. Soak them for 1 hour in the buttermilk and milk solution. After they've soaked, toss them in seasoned flour. Fry the onion rings in small batches at 360 degrees, till crisp and golden brown. Serve with Spicy Aioli. For the Aioli (Dipping sauce) 1 egg yolk 1 tablespoon fresh lemon juice 1/2 cup peanut oil 1 clove garlic, finely diced 1 teaspoon smoked paprika 1/4 teaspoon cayenne pepper, or to taste Combine all ingredients, except oil, into a food processor, blender or mixer. Let mix for about 10 seconds. Very slowly pour a very thin stream of oil into the food processor. When it thickens, add a little water to thin to desired consistency. Season to taste with salt and pepper. Yield: 1/2 cup
