Greek Lentil Soup
"What comes to mind when you think of comfort food? Home made soup is high on my list of foods that make you feel good! Don’t panic! I know the term home made soup is often fraught with images of hours in the kitchen and tons of ingredients. Does not have to be the case! This Greek Lentil Soup is so simple and is ready in about two hours, not including soak time. Can be made ahead or on a weekend; just heat it up and serve with a tossed salad for a super healthy weeknight dinner! Speaking of super healthy, did you know that lentils are not only economical, but full of protein, minerals and fiber? There has been further evidence to suggest that lentils protect heart health! Talk about a win win! Low in calories, low in fat, high in protein, economical and they taste sooo good! Although many do not feel the need to soak lentils as you would most other dried beans, I do. Soaking lentils and any other dry bean will reduce the ill effects (as in gas) because soaking breaks down the particular sugar that causes it! So, break out that stock pot and start cooking! Your family will love my Greek Lentil Soup."
