Polish Potato Pancakes

I have only recently discovered potato pancakes. I make my own version called Boxty but that is made with mashed potatoes not grated. I would like to try this version. I made mine rolled and stuffed with creamy chicken. It was delicious. I would like to try these with the sour cream.

In our family we all love potato pancakes and having made this recipe for our barbecue yesterday I am happy to say that they are very good indeed! We did add a sprinkle of cayenne pepper to add a little Bite to the pancakes but otherwise we followed the recipe exactly as shown. Served with sour cream and chives (as they suggest) they are delicious but these really are good enough to eat with any topping at all.
