Ingredients
- ½ cup coriander leaves
- 3 cloves garlic
- 2 large green chillies (the large, less spicy ones, like poblano)
- 2 tablespoons EVOO
- ½ teaspoon salt
- ½ tablespoon lemon juice
- ½ teaspoon pepper
- 2 grilled corn on gas

– Place the two peppers on an open flame to roast.

– Remove when done and allow to cool before peeling off the skins.

– Cut and de-seed and place in the mixer with the coriander and garlic.

– Pulse a few times until you get a coarse mixture.
