Chili Con Queso Bites

Ingredients
- 4 eggs
- 1/2 cup Pace® Picante Sauce
- 1/4 cup all-purpose flour
- 2 teaspoons chili powder
- 6 ounces shredded Cheddar cheese (about 1 1/2 cups)
- 1 green onion, chopped (about 2 tablespoons)
Instructions

Heat the oven to 400 degrees F. Lightly grease 24 (3-inch) muffin-pan cups.

Beat the eggs, picante sauce, flour and chili powder in a medium bowl with a fork or whisk. Stir in the cheese and onion.
- Spoon about 1 tablespoon cheese mixture into each muffin-pan cup. Bake for 10 minutes or until the bites are golden brown. Serve warm or at room temperature with additional picante sauce.

Even though Pace Sauce is not a thing here in Africa I was, nonetheless, intrigued by this recipe so gave it a try with a bit of improv on the side. This is a really good cocktail snack and one which disappeared in under 10 minutes at the drinks party we had over the weekend!

These sound like a super quick and tasty thing to whip up before watching a movie or a game. I agree that using some pepper jack or other spicy cheese instead (or in addition to) the cheddar would be fun to try. I really like spicy foods, and I don't mind kicking up the heat a bit.

These Chili Con Queso Bites look totally awesome. They are so easy to make and it takes less than half an hour. I like this as you can whip them up whenever you need something quickly.....like making a snack for teenage boys who never seem to get enough to fill them.

I feel like these would be a great tailgate party or Superbowl snack! They're quick to make, have good flavor, and bite-sized with no mess. Cheddar works well but maybe a pepperjack cheese would be good, too!

As one who VERY SELDOM salts ANYthing, (Salt is not healthy) It looks good to me.

I only made a half batch. They were very good, but they needed salt. Therefore, I would add salt to taste in the recipe. I was also thinking that corn would also be good in the bites. I will try that next time I make them.
