Mini Stuffed Peppers
"Colorful bites full of flavor. These stuffed peppers make an ideal snack for the family or a get-together as a pretty finger food everyone can dip and eat! This stuffed pepper recipe has some of my beef barbacoa in each pepper, which gives you nutrients like iron and protein with the small portion size limiting the fat and calorie content. You round out the dish with some cheese and your choice of nutrient-dense guacamole and/or salsa."

Ingredients
- 1 pound mini sweet peppers
- 1 cup beef barbacoa
- 1/2 cup Mexican cheese blend
- Guacamole and/or salsa for serving

Preheat oven to 350°F.

Place mini sweet peppers on a cutting board. Slice off one side of each pepper horizontally to make a pepper boat. Discard the seeds.

Line a baking sheet with parchment paper or foil. Stuff each pepper with beef barbacoa and place them in the baking sheet in a single layer. Sprinkle with cheese on top.

Bake for 10-12 minutes until cheese is melt.

To serve, grab one mini stuffed pepper and dip it into guacamole or salsa, or both (because why not?) Enjoy!

We stuff our mini peppers with cream cheese, shredded cheese, and taco seasoning they are to die for! It is always the biggest hit whether at a party or just a family dinner. And if you do have leftovers (which is rare), they reheat in the microwave for just a few seconds and still have a great taste and texture! Will have to try this variety next!
