The Best Stuffed Mushrooms

Ingredients
- 15 to 16 button or crimini mushrooms
- 1/2 cup bread crumbs
- 3 tablespoons extra virgin olive oil
- 1 teaspoon lemon juice
- 4 ounces cream cheese at room temperature
- 2 tablespoons baby dill, chopped
- 1 garlic clove, chopped
- 1/2 cup parmesan reggiano
- 1 teaspoon fresh thyme leaves
- 1/4 teaspoon cayenne pepper
- salt and pepper, to taste
Instructions

Preheat oven to 425 degrees F.

Take mushrooms legs out and finely chop them.

Add to chopped mushroom legs bread crumbs, lemon juice, lemon zest, cream cheese, baby dill, garlic, parmesan reggiano, fresh thyme leaves, cayenne pepper, salt and pepper; mix well.

Take lined tray with parchment paper, place mushroom tops and cover them with oil. Then arrange them with opening side up and stuff them with 1 to 1.5 teaspoon of stuffing each.

Pop to oven for 15-20 minutes or until the stuffing is caramelized and mushrooms beautiful and a bit brown on the bottom.

This is a great recipe. Made them this afternoon to take to a church dinner and they were gone in a matter of minutes. The chopping of the mushroom stems and rubbing the olive oil on the mushrooms took the longest, but well worth it. Everyone raved over them. Thanks for a great recipe.
