Apple Bars
Ingredients
- 3/4 cup butter
- 2 cups flour
- 1 cup brown sugar, packed
- 1/2 cup quick cooking rolled oats
- 6 cups peeled and chopped apples
- 1 cup granulated sugar
- 1 cup water
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 cup flour
Instructions
Preheat oven to 350 F. Place butter in small saucepan and melt over medium heat. Pour into large mixing bowl. Add flour, brown sugar and rolled oats. Mix with a fork or pastry cutter until completely combined and evenly mixed. Reserve 1 cup of mixture and set aside to sprinkle on top of bars later on. Grease a 13x9 inch pan and press remaining mixture into pan. Spread chopped apples over crust. Place granulated sugar in small saucepan. Add water, vanilla, cinnamon and flour. Cook over medium-low heat until thickened, stirring while cooking with a fork or whisk. Pour mixture evenly over apples. Spread reserved 1 cup of sugar-oat mixture on top. Bake in preheated oven about 45 minutes. When done, remove bars form oven and set pan on a wire rack to cool. Makes about 24 pieces. You can also try substituting 6 cups of chopped rhubarb for the apples.
