Ma's Crunchy No Bake Peanut Butter Bars

Ingredients

  • 4 tablespoons unsalted butter
  • 1 cup chunky peanut butter
  • 1/2 cup light corn syrup
  • 1/3 cup light brown sugar
  • pinch of salt
  • 4 cups corn flakes, gently crushed
  • 1 teaspoon vanilla
  • 1/4 cup lightly salted peanuts, chopped
  • 1 cup semi sweet chocolate chips
  • 2 additional tablespoons peanut butter (creamy or chunky)

Instructions

  1. Line an 8 by 8 inch pan with foil and spray lightly with cooking spray.

  2. In a medium sauce pan, melt the butter, chunky peanut butter, corn syrup, and brown sugar. Stir until combined.

  3. Add in the salt and vanilla. Stir in the corn flakes, lightly crushing them in your hands as you add them in. Stir to combine.

  4. Pour the corn flake mixture in the prepared pan and smooth the top.

  5. In a double boiler (or a bowl set over a simmering pot of water) melt the semi sweet chocolate chips and 2 additional tablespoons of creamy peanut butter together.

  6. Smooth over the top of the corn flake mixture and top with the chopped peanuts.

  7. Chill for at least 2 hours before cutting.
