I'm familiar with the po'boy sandwiches that feature seafood, but had forgotten that there was a roast beef version as well. It looks absolutely delicious and really easy to make. Keeping the gravy on the side to use as a dipping sauce (like a French Dip sandwich) is something I'd consider doing to cut down on the mess factor. Adding the gravy on top of the beef would seem to require the use of a knife and fork, but I'm sure it's good either way.
