Old-Fashioned Meatloaf

Ingredients
- 1 pound lean beef
- 1 large onion, finely chopped
- 1/4 cup natural bran
- 1 slice whole-wheat bread, crumbled
- 1/2 teaspoon thyme
- 1/2 teaspoon salt
- dash Worcestershire sauce
- freshly ground pepper, to taste
- 1 cup tomato juice or tomato sauce
- 1 egg, lightly beaten
- 1 teaspoon fresh thyme, chopped
- 1 teaspoon fresh rosemary, chopped
- 1 teaspoon fresh savory, chopped
- 1 teaspoon fresh sage, chopped
Instructions
- Pre-heat oven to 350 degrees F.
- In mixing bowl, combine beef, onion, bran, bread crumbs, thyme, salt, Worcestershire, and pepper to taste.
- Stir in tomato juice, egg, and herbs (if using); mix lightly.
- Turn into 9 x 5-inch loaf pan or baking dish. Bake for 45 minutes or until brown and firm to the touch. Remove from oven; pour off fat.

If dinner needs to be ready quickly, this recipe is for you since cooking time is only 45 minutes, instead of more than an hour with most meatloaves. When making this, I would use lean ground beef, low sodium Worcestershire sauce, and low sodium V8 juice. Serve this main dish with mashed potatoes and green beans, and you have a complete meal.
