Porcupine Quills
Ingredients
- 1 pound ground beef or venison
- 1/2 cup wild rice, uncooked
- 1 can tomato soup
- 1 cup onion,diced
- salt and pepper to taste
Instructions
Mix all ingredients except the soup and form this into small meatballs. Add 1 cup water to the soup concentrate and bring this to a slow boil. Gently drop in the meatballs and simmer with a tight fitting lid. Cook until the wild rice is done and sticks out of the meatballs like tiny porcupine quills (about40-50 minutes).

This recipe is similar to the one for porcupine meatballs, but with less ingredients and work involved. Meatballs are a family favorite, and especially popular with picky eaters. For this dish, I would use lean ground beef. Ground turkey could also be used. Instead of wild rice, I would use long grain rice. For the tomato soup, I would recommend using Healthy Request tomato soup. These porcupine quills can be served over rice.
