I don't think I have ever cooked with tri-tip steak. Is it like a sirloin or closer to a round steak? I know the cut matters to the way you cook it and how long it needs to cook. I am looking forward to trying the peppercorn gravy for this dish. I bet it is creamy and flavorful.
