This looks wonderful! I'm used to bread bowls for soup, but I hadn't thought about hollowing out loaves of bread and using them this way. This looks like an easy and very tasty breakfast dish to make that's also flexible in what ingredients one can use. I like the idea of using bacon, since that's one of my go-to breakfast meats. The use of goat cheese is new to me and I'm looking forward to trying this.
