Blueberry French Toast Bake
"This super easy blueberry French toast bake is a casserole-style dish that’s perfect for making French toast for a group, and it travels well for potlucks and other events. In my family, French toast bakes (or French toast casseroles) are a go-to recipe for parties, and making one of these casseroles is just as easy for a weekend breakfast or brunch at home. I love the tart, fruity flavor that the blueberries add, and you can use your favorite type of bread to mix up the flavor combination as well. I used a thick white bakery-style bread that I find a little sweeter, but I’ve heard it’s also very popular to use sourdough bread."

Ingredients
- 1/2 loaf thick white bread, about 9 pieces
- 4 eggs
- 1 cup milk
- 1/4 cup heavy cream
- 1/4 cup sugar
- 1 tablespoon vanilla extract
- 1 cup fresh blueberries (more as desired)
- For the Streusel Topping:
- 1/4 cup flour
- 1/4 cup brown sugar
- 4 tablespoons butter, cold and cubed
- 1 teaspoon cinnamon
Instructions

Preheat the oven to 350 degrees F and lightly spray a casserole dish with cooking spray.

Note: You can use this with various sized dishes, but you may need to adjust the cook time. I used a smaller pan, which resulted in a deeper French toast bake that needed to be baked the full time in order to reach the center.

Cut the bread into equal sized pieces, about 1-inch squares, and add to the greased dish along with fresh blueberries. Toss as needed to evenly distribute.

In a mixing bowl or large glass measuring cup, whisk together the eggs, milk, cream, sugar and vanilla extract until smooth. Pour evenly over the bread and set aside while you make the streusel.

In a separate bowl, combine the flour, brown sugar, cinnamon, and butter. Use a fork or a pastry knife to cut into the mixture until crumbly. You can also combine all ingredients in a food processor and pulse until crumbly.

Sprinkle the streusel evenly over the bread and bake for about 45 minutes (or up to an hour) until the top is lightly crispy. Bake for more than 45 minutes if you prefer a less soft center.

Use a large spoon or spatula to serve warm and top with syrup and other toppings for a deliciously easy and sweet breakfast!

We have blueberry bushes that are beginning to produce a lot of berries, and this is a great way to use them. My wife and I both love French Toast, and this casserole bake would make a wonderful breakfast, or with some whipped cream or ice cream, it could also make a terrific dessert. My mouth is watering just thinking about this. We also have strawberries coming in, and it'd be fun to try those as well.

I love french toast, and now that berry season is almost here, I can't wait to try this recipe out with strawberries and blueberries, maybe even rhubarb! I love that you can use any type of bread, this would be a great way to use up leftover bread. I would also try it with non-dairy milk to keep it lactose free. Has anyone tried making this recipe ahead, say the night before, and then baking the next morning? It would be handy to be able to heat this up, serve and eat!

I just learned how to make overnight french toast, so I'm clearly on a kick to master it! I can't wait to try this out, it looks divine and easy to make!
